Extreme-Temperature Compressible Graphite Gaskets
For the actual head gaskets.  Cuts real easy but you have to watch it as it is REAL slippery (duh, it's graphite).  Don't ask me how I know.
Can be had in 1/32", 1/16", and 1/8".
We used a variety of other gaskets for side covers and stuff.
 
So far it's worked very well, no signs of burning or blowout.  This is a large bore (14") semi-diesel.
