Joe,  Another point that others haven't mentioned yet is using Spot 
Metering.  You set your camera to read the light available at a single 
point, rather than averaging the light available in the whole pic.  You 
can then vary the light registering on the image by pointing at a dark 
part of what you are photographing or at a lighter point on the object. 
  The result will be more light on the image or less.  I normally shoot 
using spot metering.
